This dessert is very light and has hardly any fat.
Ingredients:
225g dried apricots
300g orange juice
2 tablespoons lemon juice
2-3 tablespoons honey
1 pck galantine
115g hot but not boiling water
Put apricots and orange juice in a sauce pan and boil up and than let it simmer for 15 – 20 min. until apricots have soaked. Let it cool for 10 min.
Puree the mixture and add lemon juice and honey.
Fill hot water in a bowl. Add galantine bit by bit.
When galantine has dissolved, add it to apricot mixture.
Fill apricot mixture in 4 dishes and let it cool in the fridge.
